MARRIAGES

Est Est Est Cookbook

by Donovan Cooke and Philippa Sibley Cooke

Used, out of print collectable hardcover book with dustjacket in very good condition. Published 1999, 166 pages with lots of beautiful colour photos by Simon Griffiths.

From the award-winning restaurant est est est comes Marriages, which chronicles the passion, talent and spectacular food of Donovan Cooke and Philippa Sibley-Cooke. For years Donovan and Philippa have been seducing food lovers with their quality cuisine that is predominantly French inspired but uniquely their own. Combining the best of Australian produce and classical technique their food is at once elegant and comforting, challenging and rewarding.

In Marriages they reveal the secrets to some of their most popular dishes. Eager home cooks will want to try their hand at bold flavour combinations that make use of riches from land and sea. Here are recipes for game, fish and fowl, pigeon, quail and squab as well as beautiful vegetables and fruits of the season. Revel in Gazpacho with Tian of Crab, Cucumber Spaghetti and Avocado Mousse; Mosaic of Chicken, Leek and Foie Gras; and Tortellini of Wild Mushrooms with Velouté of Du Puy Lentils and White Truffle Oil. Delight in Philippa's signature desserts such as Pyramid of Strawberry Sorbet and Pink Champagne Parfait; and her Sable of Apricot Sorbet and Star Anise Mousse.

Organised seasonally so that you can make the most of nature's bounty, this lavish feast of colour and food will inspire and delight your senses. Handsomely illustrated by Simon Griffiths' photography and Visnja Brdar's bold design, Marriages is a cookbook for every serious cook and food lover.

Marriages Est Est Est Cookbook is an Australian publication. All recipes are in metric, imperial, and cup & spoon measurements

About the authors

Yorkshire-born Donovan Cooke started out at London's Savoy restaurant at the age of 18. He worked with Michel Roux for more than three years at the Waterside Inn and, at the age of 23, joined legendary chef Marco Pierre White at Harveys as Head Chef. Two years later they opened the Restaurant Marco Pierre White at the Hyde Park Hotel, London which was subsequently awarded three Michelin-starred status.

After early training in Melbourne, Philippa Sibley moved to London where she climbed the ranks at Quaglino's. From there she went to work for Marco Pierre White at Canteen, where she met Donovan. They married in 1994 and spent a year working in the three Michelin-starred La Cote St Jacques at Joigny in France.

The couple then left Europe for Philippa's home city of Melbourne with the idea of opening up their own establishment, one which offered quality classical French cuisine. After working at Mietta's restaurant together where Donovan was head chef, Donovan and Philippa took the opportunity to join Frank Heaney in opening their first restaurant. Previously Frank had been maitre d' at Jacques Reymond's for eight years. est est est, in South Melbourne, opened to critical acclaim in early 1997. This was followed by the opening of their second restaurant, Luxe, in St Kilda, two years later.
