People are eating more fish at home than ever before. Part of the reason is that we now know how good for us fish and seafood are - they're full of heart-healthy omega-3 fats. We are lucky that fresh seafood is so readily available for us to enjoy. It can be poached, shallow-fried, stir-fried, deep-fried, grilled, baked, steamed and barbecued, or served raw. The recipes contained in this book are for fish fillets and cutlets, whole fish, prawns, oysters, mussels, smoked fish and canned fish. They range from elegant dinner party food to a simple tuna salad.
Seafood in general, be it fresh, smoked or canned, should be part of everybody's diet. Introduce fish to toddlers as early as possible, encourage children to eat fish and other seafood so it becomes a normal part of their diet. Most fresh seafood has a season when it's plentiful and at its best, and is cheap to buy - just like fruit and vegies. If your family eats seafood at least twice a week, the general health of everyone will benefit enormously
